Baking isn’t your average 9-to-5 job. In the Seaside Sandy Beach bakery, the team works in two shifts, from 1 a.m. until 5:30 p.m., requiring a great deal of effort and dedication each day. André admits he wasn’t “exactly a passionate baker” at the start, but he was fortunate to have a mentor who showed him the true art of baking. “He instilled in me a real passion for it.”

Since then, André has spent his days surrounded by dough and ovens, “even though it’s not always easy.” “I devote myself to my craft with everything I have: my motto is blood, sweat, and tears,” he says, adding, “I get goosebumps just talking about it.”

 

From Apprentice to Head Baker – A Journey Around the World

André Waldow is a “man of the world” who always wanted to travel abroad. His first opportunity came in Japan. “In Tokyo, I worked for a supermarket chain with an in-house bakery,” André explains. From there, he moved on to Norway and then to Spain, where he eventually landed on Gran Canaria. “The Canary Islands really captivated me”, André recalls. After stints on Tenerife and Lanzarote, he settled on Gran Canaria, where he’s been able to develop his signature style at the Seaside Sandy Beach.

 

The Secret to Success: Local Ingredients and German Baking Mastery

Here in Playa del Inglés, André experiments and combines various ingredients to create top-quality products. His recipes use core ingredients from the region: flour, salt, and oil. “The only things we import from Germany are special spices like caraway,” he notes.

Seeds and nuts are also key elements in his creations. If he had to choose a favourite product, he’d recommend his spelt bread: “It’s a must-try. Perfecting the recipe wasn’t easy, but it was worth it – guests and staff alike love it and often take it home with them.”

A Bread Selection to Delight Every Palate

Beyond spelt bread, the Seaside Sandy Beach bakery offers around twenty types of bread that delight guests from around the world. Grain breads and pretzels are especially popular, but the selection also includes black bread, rye bread, sourdough, baguettes and sesame and wholegrain rolls. Currently, André is working on a focaccia recipe to add an Italian twist to his lineup.

Special occasions and holidays bring even more variety to the bakery. “At Christmas, we have Stollen and gingerbread. Halloween brings mini witch houses, “one for each guest – they’re very popular,” Waldow explains.

“My most important skill is my intuition for baking”, Waldow says. “There are many methods and techniques, but in the end, it’s the result that matters.”
